Lebanese Salad with Pita Chips

Summer is the time to eat salads, when all the veggies (and fruits) are fresh and vibrant.  Usually, it’s also so hot that turning on the stove or oven is not what you’d like to do.  So there is always salad.

The only problem I have with salads is that they sometimes get boring.  So I’m always searching for a new flavor, a new component, or a new idea.  I’m sharing this salad with you since all of you might need some new inspiring ideas for salads, with summer in full swing!  Or if any of you have delicious ideas, I’d love to hear them!

Lebanese Salad with Pita Chips
Adapted from: Vegetarian Times (July/August 2012)

Salad
1 head of romaine lettuce, chopped
1 pint of cherry tomatoes, halved
3 cups of chopped cucumbers
1 red bell pepper, diced
1 yellow bell pepper, diced
3 green onions, chopped
1/2 cup chopped fresh parsley
1 tbsp chopped fresh mint
2 cups of whole grain pita chips, crumbled/broken

Vinaigrette
3 tbsp olive oil
juice of 1 lemon
1 tbsp pomegranate juice (such as POM Wonderful)
2 tsp ground sumac
4 garlic cloves

4 oz crumbled feta

In a large bowl, mix together all of the ingredients for a salad.

In a small bowl, whisk together the ingredients for the vinaigrette.  Top the salad with the vinaigrette.

Sprinkle the crumbled feta over the top and serve.

Lentil & Summer Vegetable Salad

I cannot believe that it’s August, I feel like summer is flying by!  We’re trying to enjoy the the summer fruits and vegetables every single day.  There are many fresh tomatoes, zucchini’s and cucumbers in our fridge.

I’ve been trying to make easy salads that incorporate summer vegetables.  This is a salad which was not only nutritious, but also delicious (sorry, that’s so cheesy!).  But it’s true!  Definitely a keeper for a lunch salad.  It’s great with a slice of fresh bread or a pita.

Lentil & Summer Vegetable Salad
Adapted from: Fresh 365

1 cup of uncooked lentils
2 tomatoes, chopped
1/2 red onion, chopped
10 radishes, sliced
1-2 bell peppers, chopped (use colorful one’s)
1/2 cup cilantro, chopped
1 cup kalamata olives, sliced in half
1/4 cup capers, drained
1/4 cup olive oil
juice of 1 lemon
1 1/2 cups feta cheese, crumbled

Cook lentils in boiling water for about 20 minutes.  Drain, and add to a large bowl.  Add the tomatoes, red onion, radishes, bell peppers, cilantro, kalamata olives, capers, olive oil, lemon juice and feta cheese.  Toss all of the ingredients together before serving.

Penn Quarter Farmer’s Market Summer Salad

Yes, it was a Farmer’s Market day today!  As I’ve written before, the Penn Quarter Farmers Market, here in Washington DC, is amazing!  It’s held every Thursday and we’ve been purchasing various fruits, vegetables, meats and eggs from there every week, it’s something I look forward to!

For over a week I’ve been craving a vegetable salad.  Just fresh veggies- easy and simple!  The weather has also cooperated today, it wasn’t too hot, which made it even better.  After making dinner, we went up on the roof and had our delicious salad, with some wine.  There was a nice breeze, and it wasn’t hot and humid.  Couldn’t have asked for a better Thursday night dinner.  I think there will be many more of these as the summer continues.

Penn Quarter Farmer’s Market Summer Salad

2 large heirloom tomatoes, roughly chopped
9 small cucumbers, sliced
1/2 red onion, chopped
1 red bell pepper, chopped
1/2 cup pitted kalamata olives
3/4 cup crumbled feta cheese
1/4 cup olive oil
juice of 1 lemon
salt & pepper to taste

Toss all ingredients together, and serve.  Bread and wine taste delicious with this!
