Nashville: Lockeland Table

As I mentioned in many blog posts, I spent a weekend in Nashville a couple of weeks ago.  It was a girls weekend trip planned last June to run the Rock ‘n Roll Half Marathon.  Although we had pretty horrible weather for the trip, I was glad to experience Nashville’s delicious food!

Whenever I travel to new places, I like to have a good grasp on the city: popular bars, good restaurants, the streets that you need to walk on, or the beautiful parks.  This time around I wasn’t as prepared as I wanted to be.  But with the amount of rain falling on the city, I was just fine with exploring the great food and music.

There are many bars such as this one on Broadway, filled with local beers, live music, and an entertaining crowd.  Don’t worry, that was a box the girls and I definitely checked off- but we also wanted to try delicious food!

My friend Becky, who resides in Boston and is a new blogger, and I flew into Nashville on Thursday before everyone else.  Back in the January issue of Food & Wine, we noticed Top 10 Plates of Nashville.  After browsing the menus and reviews, we chose Lockeland Table as our Thursday girly date night location.

Lockeland Table opened in August of 2012, so it’s a fairly new restaurant- but I couldn’t tell that by the excellent service and delicious dishes.  The building used to be a small grocery store, and Chef Hal Holden-Bache and General Manager Cara Graham wanted to keep some of the historical details- the original phone number, the 30-foot rafters, and they even replicated a similar sign that once hung in the original store.  The ambiance is relaxing and intimate, with a wood-fire oven as the centerpiece of the room, a repurposed original stamped-tin ceiling, and the recovered barn wood decorating the space.

The restaurant is situated in the East Nashville residential district, a couple of miles away from the bars and music halls.  We took a cab ride from the Sheraton, where we were staying, and it was about $10- definitely worth the trip!  Per website recommendation “reservations are highly recommended”, we had made one about 2 months ago!

The menu is local, with purveyors for produce and meat given credit on the menu, and seasonally inspired, which makes it hard to choose your dish- but that’s a good problem to have!  The low-carbon footprint extends to the bar, with just American vodkas, local bourbon and whiskey, as well as Tennessee beers such as Yazoo, Fat Bottom and Jackalope.  There are a couple of exceptions, the bar does have scotch and international wines.

Chicken Liver Pâté in a Jar: Benton’s bacon fat, grilled Tuscan bread, and smoked peach preserves

The pâté is served in a small mason jar, with the layer of bacon fat on top.  The liver was smooth and velvety.  The thick-cut grilled toasts are perfect for the spread, and the overturned lid holds the smoky preserves.

Cox Farms Roasted Bone Marrow: grilled Tuscan bread, Italian parsley, pickled red onion salad

The pickled onion isn’t just there for decoration, it’s to add to the dish.  Interestingly enough, it is pickled by Holden-Bache’s mom, his friends, and himself from his garden!  Rubbing the marrow on the crisp toast, and sprinkling with parsley and pickled onions, was dazzling and finger-licking delicious!  The straight-forward presentation fit the ambiance of Lockeland Table.

Carolina Mountain Trout with Honey Bourbon Glaze: spring hash, lemon spring cream, crispy prosciutto

Although the trout is always on the menu, the sides depend on the season- the start of spring is vivid with the fresh green peas, light cream and dill.  The trout was perfectly seared with a crispy skin, not overwhelmingly heavy, but still full of flavor.

Steak and Frites with Roasted Tomato Aioli: Hereford hanger steak with balsamic, cipollini butter, arugula

The steak was cooked just as I asked, medium rare.  Seared, crispy on the outside and tender on the inside.  The aioli was balanced, rich and savory- great to spread on the steak, or to dip your fries into!

We were too full for dessert- but the sweet ricotta doughnuts and the rhubarb strusel cake did catch my eye.  I think this just means we have to visit Nashville for another (sunny) weekend!

Monthly Review: April 2013 1

After running the Rock ‘n Roll Half Marathon in DC, I needed some new shoes.  For running apparel, one of the best places to go in DC (or Virginia) is Pacers.  After trying out a bunch I chose these Mizuno‘s- they’re probably a little flashier than I prefer, but fantastic to run in!  What races are others running?  Any favorites one’s you’ve done before?

While training for a full or half marathon it’s important to get some delicious food, here are some suggestions for great fueling: Garlic Hummus, Chocolate Chip Banana Bread, Fall Granola, Sausage, Egg & Cheese Breakfast Casserole.

Monthly Review: April 2013 4

This month was busy for our new house, we had a housewarming with our friends, a brunch housewarming with Sam’s family, and both of our families came to check out the new digs!  It was a little hard to choose recipes for people to snack and nibble on (so many choices)!  Here are some links to what we made for our visitors: Herbed Almonds, Cream Cheese and Arugula Baguette Bites, Mediterranean Turkey Balls with Herbed Yogurt Sauce, Creamy Ranch Dressing, Lemon Bars, lox and cream cheese, Smokey Quiche, No-Bake Coconut “Cheesecake”, vegetables, fruit.  What are your favorite go-to ideas when you host parties?

Thanks to some expert advice from Emily, we tried making a pizza on the grill!  So delicious- would anyone be interested in a post on how to do it?  What are your favorite pizzas?  Some of our creations include: Apple & Smoked Cheese on Whole Wheat and Mushroom & Broccoli Pizza.  The one in the photo above is actually a “clean out your fridge” pizza.

When my parents were visiting DC, we took a day trip to Annapolis.  As we wandered through the cute city, we stumbled upon Seasons.  It’s an olive oil and vinegar taproom- a way to sample delicious oils and vinegars.  After trying out some, we each bough a couple to try out in our salads!

Lastly, while at the expo- we got to hear Kara Goucher speak and take a photo with her!  It was really exciting for all of us.  The girls running weekend turned out great, even though we had some crummy weather.  Thanks for an awesome time: Becky, Beth, Cassie, Katie, Katie, Lianne, and Sarah!  (two of these ladies are bloggers, so definitely check their blogs out for more Nashville fun)

Food Matters Project #39: Bulgur Wheat Mango Salad with Avocado

Remember last week how I talked about how awesome salads are?  Well, this week we have another one!  I’m hoping all of you will be trying out some of these soon!

I actually made this recipe last week, I needed a salad that was filling and healthy to prepare for the Nashville Rock ‘n Roll Half Marathon.  I’m putting together a post about my trip to Nashville- so be on the lookout for some delicious food photos.  Until then, make this salad and enjoy it!  This is perfect for the spring, as the weather begins to warm up.  I found myself eating this out on our porch, sitting in our new chairs, and sipping a glass of wine.  Relaxing!

Bulgur Wheat Mango Salad

Bulgur Wheat Mango Salad with Avocado
Adapted form: The Food Matters Cookbook (pg 174)

This salad would also be great in mid- to late-summer when peaches are in season, just swap two of them for a mango.

1/2 cup uncooked bulgur wheat
2 cups cooked or canned chickpeas
3 garlic cloves, minced
1/4 small onion, finely chopped
1/2 cup cilantro, chopped
1 mango, chopped
1 tbsp olive oil
juice of 1 lime
pinch of salt
pinch of pepper
1 avocado, sliced

Cook bulgur wheat according to package directions.

In a large bowl, mix together the cooked bulgur wheat, chickpeas, garlic, onion, cilantro, mango, olive oil, lemon juice, salt and pepper.  Serve with the avocado on the side, or in the salad.

March 2013 Review 1

Unfortunately, the month of March started off on a sad note for us.  One of our adorable kitties, Malcolm, passed away.  I realize not everyone feels this way, but to us the cats are like family and it’s difficult when they’re gone.  Thank you to all of our friends and family for the kind words, wonderful memories, and flowers.  We’ll miss you Malcolm!

I’m probably the last person to check out Union Market, but thanks to my friend Alix- I (finally) did!  After sandwiches from Red Apron Butchery, I also got some goodies for Sam.  Alix and Sam are pickle lovers, so thanks to her I was able to choose the best one’s from Oh! Pickles.  I also bought some fresh bread, from Lyon Baker, and a new beer from Cordial.  Have you been to Union Market?  If so, what’s your favorite place to eat at?

One early afternoon, Sam and I explored a new place- The Coupe.  It’s a 24 hour diner in DC.  Since then, I’ve also stopped by for coffee on a Saturday morning- lots of people coming in for brunch!

The 2 days before running races I like to make a giant pot of pasta.  Of course, I get bored of just red sauce- so I tried out a brussels sprouts mac ‘n cheese recipe.  Need other some new recipe ideas? Clams and Linguine with White Wine Sauce; Green Pea & Pancetta Linguine; Kale Lasagna; Lobster Mac ‘n Cheese; Mushroom Bolognese Fettucini; No-Cook Spaghetti Sauce; Provencal Pasta Sauce; Rigatoni with Vegetables, Figs & Blue Cheese; Sam’s Summer Pasta Sauce.

March 2013 Review 6

I ran in the Rock ‘n Roll Half Marathon!  This was my 10th half marathon!  Congrats to all the runners out there, and thanks to my friends Steph & Cassie for being great cheerleaders.  Unfortunately, Sam was unable to run- but as always, he was my best cheerleader out there!  I also celebrated by eating a couple of our Green Cupcakes with Cream Cheese Frosting!

I’m excited for #11 next month: the Rock ‘n Roll Half Marathon in Nashville.  Anyone running that race?  Any Nashville recommendations?  It’ll be a fun girls weekend which includes my friends Becky and Lianne- make sure to check out how their training is going!

March Review 2013- 7

Welcome the newest member of our family at Fifth Floor Kitchen!  His name is Fuggles- it’s a type of hops used in British beer.  One of Sam’s hobbies is brewing his own beer, which is where we got the idea for this cutie’s name.  He’s a little less than a year old, and a very energetic little guy!  I’m sure he’ll keep Van Gogh (our other kitty) on his toes!

Every couple needs a date night.  Everyone needs a date night at Red Rocks.  It’s our favorite pizza place in DC, and you all should check it out (at least) once.  Above is the Roasted Eggplant pizza (roasted eggplant, goat cheese, pesto, parmesan).  You should all be happy I shared this classified secret with you!  ;)

I really enjoy having dinner dates with food blogger friends- I always get the great gossip about new restaurants, best dishes and fun events.  This past month Olga, from Mango & Tomato, and I went to Dukem.  I haven’t had Ethiopian in a long time, and it was nice to try a new spot.  Have you had Ethiopian?  If not, definitely give it a shot.

The Monday’s in March have not had the best weather- hello snow!  I’m hoping April will bring more sunshine and higher temperatures.  We did stay warm this month by making some of these recipes: Dal with Lots of Vegetables; Provencal Pasta Sauce; Rhubarb-Blueberry Pie; Rice & Lamb Burgers with Spinach & Tzatziki Sauce and the Banana & Chocolate Chip Cake.

To end the month on a delicious notice- my runner friend Tracy and I tried this amazing dessert: Deep Fried-Bacon Wrapped PB Cups.  Where can you find this treat?  At The Passenger!  Awesome bar too, so doubly worth the visit.

Happy St. Paddys’ Day 2013: Green Cupcakes with Cream Cheese Frosting

I hope you all have had a great St. Patrick’s Day weekend this year!  If you follow me on Instagram, you may have seen that I ran the Rock ‘n Roll USA Half Marathon (my 10th half!).  The next race I’ll be participating in is the Rock ‘n Roll Nashville Half Marathon in April.  I can’t wait to spend the weekend with some of my girlfriends (who live near and far), including these two awesome bloggers: Becky and Lianne.  If you have any Nashville suggestions for us, please send them my way!  Anyone running this race?

Earlier this week we had some friends over for dinner, and although we made Mexican for the main dish- I thought we needed a something green to brighten up the dessert.  Of course, Pinterest inspired me to try a new cupcake recipe, and fortunately it turned out delicious and green!

Today’s celebration included Corned Beef and Cabbage for dinner.  We topped it off with a small dessert- the last 2 green cupcakes to celebrate another great St. Paddy’s Day weekend.

Green Cupcake

Green Cupcakes with Cream Cheese Frosting
Inspired & Adapted from: She Wears Many Hats & AllRecipes.com
Serving: 24 mini-cupcakes

For this recipe, I used the same frosting (just smaller amount) as I used on the Banana & Chocolate Chip Cake.

Cupcakes
1 cup white sugar
1/2 cup butter, softened
2 eggs
2 tsp vanilla
1 3/4 tsp baking powder
1 1/2 cups all-purpose flour
1/2 cup 2% milk
1 package of Jell-o Pistachio Instant Pudding mix

Cream Cheese Frosting
1/4 cup unsalted butter, softened
2 oz cream cheese, softened
1/2 tsp vanilla
1 cup powdered sugar

Preheat the oven to 350ºF.

In a stand mixer cream together sugar and butter.  Then stir in the eggs, one at a time; then add a vanilla and baking powder.  Stir in the flour and mix well.  Next, add in the milk, and mix until the batter is smooth.  Lastly, add in the Jell-o Pistachio Instant Pudding mix, combine well.

Spray the cupcake tin with cooking spray.  Then fill in each cupcake compartment halfway with batter.

I used the mini-cupcake tins, so I baked the cupcakes for 15 minutes.  If you’re using a different sized tin, add additional time.  The best way to check for doneness is to insert a toothpick into the center for the dough, if it comes out clean- it is done.  After they are done baking, take them out of the oven.  Allow them to cool before taking them out of the tin or decorating with frosting.

To make the frosting, beat the butter, cream cheese and vanilla in a stand mixer.  Finally, add in the powdered sugar, a little at a time (otherwise it’ll make a mess).
